Dassai has introduced a new, exclusive release featuring Yamadanishiki rice polished down to a mere 8%. For this sake, Dassai employed ungraded [togai] rice, a choice driven by their commitment to supporting local rice farmers and environmentally responsible practices. By utilizing rice that might otherwise be wasted due to the absence of a shinpaku [starchy core], they were able to maximize the milling process, achieving the remarkable 8% milling rate.
