Echezeaux Perdrix 2012 is crafted from grapes sourced from the esteemed Echezeaux Grand Cru vineyard, primarily from the `Echezeaux du Dessus` climat. This vineyard, with its south/south-east exposure, is characterised by its clay-limestone soil, rich with small stones. Hand-harvested and meticulously sorted, the grapes undergo a controlled fermentation lasting 15 to 18 days. The wine is aged for 16 months in oak barrels, with a notable 90% new oak.
