NPU is only produced in the greatest vintages from the finest fruit of 4 Grands Crus. The 2004 is a 50/50 blend of Chardonnay and Pinot Noir, entirely barrel-fermented and matured for 10 years on lees. At first there is tart apple but the aroma opens up to reveal chalk, honey and a buttery creaminess. Spiciness lifts the palate whilst the sinuous texture ensures everything is just so. Beautiful.

The 2004 Extra Brut Blanc de Blancs is Bruno Paillard`s Pinot Noir/Chardonnay blend vinified in oak. Rich and powerful in the glass, the 2014 is still tightly wound, despite having been disgorged more than two years ago. Vinification in oak gives the 2004 quite a bit of power and resonance to play off the freshness of the vintage. It will be interesting to see if the 2004 comes together a bit more fully with time in bottle. Today, the wine is heavily marked by wood, with strong torrefaction, coffee, hazelnut and spice accents, and less of the freshness that is the single greatest marker of 2004 in Champagne. Disgorged. Bruno Paillard is an independent and family-owned Champagne house founded in 1981 by the eponymous Bruno Paillard. Since 2018, this revered House has been run by Bruno’s daughter, Alice Paillard. Situated in Reims in the heart of Champagne, the house champions slow and sustainable viticulture and produces wonderfully pure and elegant wines, notably the Première Cuvée Extra-Brut and the Première Cuvée Rosé.

Working with over 30 different crus and 100 parcels, from Verzenay to Chouilly, the wines of Bruno Paillard are characterised by their wonderful precision and energy.
