Bozal is a Mexican producer that prides itself on crafting artisanal, small-batch mezcals using traditional methods. ‘Borrego’ means ‘lamb’ in Spanish, and the name is quite fitting as this mezcal features a unique and traditional production method where a piece of lamb is suspended above the mezcal during the distillation process, allowing the juices and fats to drip into the mezcal and impart a distinct flavour profile. This technique is known as ‘pechuga’ and is usually reserved for special occasions and celebrations.
