Bruyère & Houillon Arbois Pupillin En Aspis 2018 is a medium-bodied white wine from the Jura region of France. Based in Pupillin, Adeline Houillon and Renaud Bruyère are among the very top echelon of natural wine producers in Jura. Adeline trained at Domaine Pierre Overnoy (which is now managed by her brother, Emmanuel), while Renaud previously worked at Domaine Tissot. Together, Adeline and Renaud manage five hectares of vineyard on biodynamic principles. This is a beautifully elegant wine made from the local Ploussard variety, de-stemmed by hand and with a portion undergoing carbonic maceration. It is bottled without fining or filtration and with no additional sulphur. It is abundant with crunchy red fruits and wild herby streak, making it the ideal partner to slightly fattier cuts of meat such as shoulder of lamb.
