This superb Malbec is sourced from an organic small plot, spanning just over 1 hectare, situated in the Uco Valley at an elevation of 1,200 meters above sea level. The topsoil composition consists of silt with dissolved limestone, along with large granite rocks containing limestone deposits. The grapes are meticulously hand-harvested and undergo a 25-day fermentation process in concrete vats, utilizing indigenous yeasts. The fermentation takes place without the use of epoxy or sulphites, with 15% of whole clusters included and at a temperature of 26ºC. Following fermentation, the wine is aged for 15 months in untoasted 3,500L French oak foudres. Prior to bottling, it undergoes a gentle filtration process and further ages for 12 months in the bottle before being released.
