Fino, Amontillado, Oloroso and Beyond

One of the world's great fortified wines, Sherry is produced in the so-called "Sherry Triangle" in Andalucia, south-west Spain with the of towns of Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María are the three points. Produced using three white grape varieties, Palomino, Moscatel and Pedro Ximénez, Sherry comes in a huge range of different styles, ranging from the bone dry to the super sweet.

The styles themselves are derived from winemaking techniques, particularly in the cellar, where levels of oxidation affect freshness and flavour profile. Fino and Manzanilla are the the driest, freshest styles, pairing well with seafood and typically enjoyed as aperitifs, Amontillado and dry Oloroso offer increasing levels of nutty savouriness, while PX is an unctuous dessert wine.
