We’re excited to unveil Hedonism’s debut single cask release from the Isle of Raasay Distillery. Made entirely from Scottish barley, this lightly peated single malt has spent just under three and a half years in a small ex-Oloroso sherry quarter cask. Despite its age, the whisky`s time in the sherry-soaked oak has worked wonders, delivering a bold, full-bodied experience with layers of rich flavour and complexity that defy its youth.
About Isle of Raasay
Isle of Raasay Distillery, located on the scenic Isle of Raasay in Scotland, is the first legal distillery on the island, established in 2017. Committed to traditional methods and innovative techniques, it produces small-batch whiskies that celebrate the local environment and heritage. The team at Raasay operate one spirit still and one wash still, drawing water from their own borehole.
Total capacity is around 940,000 litres per year with maturation all taking place on the island. Fermentation generally takes around 90 hours, in stainless steel washbacks, and malt is lightly peated, usually 25-50PPM. Casks are filled at 63.5% ABV and a variety of wood types are in use including Chinquapin oak.
On the nose, this whisky reveals layers of caramelised brown sugar, baking spices, black cherry, and ripe orchard fruits, with a touch of dark chocolate, earthy forest floor, and toasted malt. The palate is a balanced mix of sweetness and spice, with flavours of spiced fruit cake, demerara sugar, and a hint of zesty citrus peel. The finish delivers a warming kick of peppery heat, complemented by notes of caramel, malted barley, herbal bitterness, fresh heather, and a lingering smoky, savoury note reminiscent of cured meat and sea air.
