Burgundy's Mineral-Laden Masterpieces
Hailing from Alsace, Vincent Dancer has been crafting outstanding wines in Chassagne-Montrachet since 1996. Dancer manages a modest, five-hectare domaine with vineyard holdings in Beaune, Pommard, Meursault, Puligny-Montrachet and Chassagne-Montrachet. He is particularly renowned for producing tense, mineral-driven Chardonnays, wines which are becoming more keenly sought-after with each new vintage.
Renowned for his meticulous vineyard management, Dancer achieved organic certification in 2012. He prefers a high planting density in order to maintain low yields and thus achieve the level of concentration that so defines his wines. In the cellar, his formula is disarmingly simple: slow pressing of the grapes and ferments without sedimentation, temperature control or sulphur additions. Minimal new oak is used for either whites or reds. Reds are made with fully destemmed grapes and there is no pumping over, only minimal punchdowns. Just a small amount of sulphur is added to the wines before bottling. In recent years Vincent has been joined by his son, Théo, in the cellar and the wines continue to go from strength to strength.
