Though descended from a long line of Burgundian vignerons, Dominique Lucas chose not to take over the family estate in Pommard, deciding instead to establish a winery in the Haute-Savoie. Eschewing the rigours of appellation control he cultivates various grape varieties employing organic and biodynamic farming practices and uses several different types of vessel for vinification and maturation. Terroir du Leman Un Matin Face is made from 100% Chasselas with élevage entirely in concrete eggs and has delicious flavours of citrus, stone fruits and almond paste, with a distinctive salty tang to the finish. It is textural and rich yet retains wonderfully fresh acidity and intense minerality, ensuring that it is a superb wine to pair with almost any fish or poultry dish.
