This white Saint-Joseph derives its name from the lieu-dit situated at the southern end of the village of Tournon. The Marsanne and Roussanne grapes composing it thrive in granite subsoils and red clay soils adorned with scattered pudding stones. In the cellar, the pressing process is intentionally slow. The resulting white must undergoes settling, vinification, and maturation on lees in new barrels for eleven months, accompanied by regular stirring. ‘Les Oliviers’ unveils a round and creamy palate, evolving into appealing bitter notes. Simultaneously, hints of citrus, honey, flowers, and enticing spices contribute to a remarkably fresh and enduring finish.
Blending 80% Marsanne with 20% Roussanne, the grapes for the 2021 Saint-Joseph Blanc Les Oliviers were harvested comparatively late at the end of September. Showcasing vivid lemon flesh, spring blossom, yellow apple and cedar, the complex aromatic profile is complemented by reductive gradations. Medium-bodied and concentrated, the 2021 shows plenty of energy. Flintstone elements enrich the layered finish. Tasted twice with consistent notes.
