The Silver Oak Napa Valley 2007 is a notable expression of Silver Oak`s commitment to Cabernet Sauvignon. This vintage is produced from Cabernet Sauvignon complemented by small amounts of Merlot and other Bordeaux varieties. The wine is aged exclusively in new American oak, which contributes defined notes of vanilla, toast and oak. On the palate, this magnum is full-bodied, with robust yet approachable tannins and a core of black fruit. Silver Oak is celebrated for its singular focus on Cabernet Sauvignon.
(13.9% alcohol): Bright dark ruby. Very ripe aromas and flavors of dark berries, cocoa powder and bitter chocolate. Fine-grained and light on its feet, with the exotic oak character typical of Silver Oak nicely supported by its intense fruit. Harmonious acidity and a slightly herbal quality contribute to the suavity of this wine. Expands nicely on the back half, with the fine-grained tannins coating the palate. An excellent vintage for this bottling: not a heavyweight but balanced and alive.
