Operated by the eighth generation of the Paillard family, Antoine and Quentin Paillard, this champagne producer is steeped in family tradition. Crafted from two Verzenay Grand Cru parcels [Les Corettes and Champs Saint Martin], this Blanc de Noirs, made entirely from Pinot Noir, underwent a 10-month barrel ageing process and spent 48 months ageing on lees sealed with cork. Expect notes of cherry liquor, pink grapefruit, berries and floral undertones.
