Pal`alma is the export label for Almamezcalera, spearheaded by the famed `Indiana Jones of Agave,` Erick Rodriguez, hailing from Mexico City. This release is made with Agave karwinskii in the region of Ejutla, Oaxaca. As it is denser and more fibrous than other agave, the mezcal produced from karwinskii is dry and herbaceous, often with ripe, fruity aromas.
