This is one of the most praised releases under the Keigetsu label, made from Gin-no-Yume rice, polished down to 58% of its original size remaining. The sake is brewed by the Yamahai method, allowing lactic acid to grow on its own. This is a full-bodied expression, with pronounced acidity and plenty of umami notes. It can be served either chilled or at room temperature.

Keigetsu

Founded in 1877, Tosa Brewing company, who produce Keigetsu, have been using the clean mountain spring water of northern Kochi Prefecture to make their excellent sake for nearly 150 years. Rice is harvested from local terraced rice paddies and the focus is on creating high quality, premium sake in a variety of traditional styles.

The team produce Junmai and Junmai Daiginjo, but also Yamahai Junmai, an unfiltered Nigori sake, a sparkling sake and a Yuzusake, made with Japanese citrus. As part of the celebrations for our 10th Anniversary, we collaborated with the team at Tosa to produce Keigetsu 10, bottled exclusively for Hedonism Wines.
