The annual release of Kanonkop Estate`s Paul Sauer is a highly anticipated event on the wine calendar, and this year is no exception. Kanonkop Paul Sauer 2021 is a blend of 70% Cabernet Sauvignon, 17% Cabernet Franc, and 13% Merlot, sourced from 30-year-old vines in Simonsberg, Stellenbosch. On the nose, it reveals notes of fresh herbs, tilled earth, and pencil shavings intertwined with red and black fruits. The wine displays a structured character with precise tannins and judicious oak influence, complementing its complex fruit profile. The finish is elongated, featuring sappy, spicy layers. Kanonkop is renowned for its commitment to showcasing the terroir of the region.
- The 2021 Paul Sauer, which spent 24 months in 100% new oak, has a very well-defined bouquet of red berry fruit, cedar and a touch of wild mint. There is a sense of control here and you would never think it was aged entirely in new wood. The palate is medium-bodied with supple tannins—a relatively elegant Paul Sauer compared to recent vintages. Lightly spiced and harmonious on the finish, this is a sophisticated wine.
