This multi-vintage champagne is a blend of 69% Pinot Noir and 31% Chardonnay, which underwent a slow second fermentation in bottle and extended ageing on its lees for 36 months. Its shows pronounced aromas of baked apples and vanilla. The palate is rich but well-balanced, with a lively, persistent finish.
- (70% Pinot Noir and 30% Chardonnay; 9 g/l dosage): Light gold. Musky pear and honey aromas are lifted by hints of ginger and white pepper. Taut citrus and orchard fruit flavors unfold slowly and betray a bit of back-end heat. Finishes with good cling and a touch of bitter pear skin.
