Domaine JM Boillot Chevalier-Montrachet 1994 is a full-bodied Burgundy white wine from the Grand Cru climat of Chevalier-Montrachet in the Côte de Beaune. Located in Chassagne-Montrachet, Jean-Marc Pillot is particularly associated with white wines from Chardonnay, although it also produces reds from Pinot Noir in both Chassagne and neighbouring Santenay. The estate owns approximately 11 hectares of vineyards that supply about two-thirds of its production, with purchased grapes complementing the rest. This bottling of the domaine`s Chevalier-Montrachet is from the 1994 vintage – one in which rigorous grape selection was essential to ensure quality and overall balance, and in which retaining acidity was a challenge. Nevertheless, the best producers released very creditable, and ageworthy, white wines.
