Established in 1959, William Fèvre has emerged as a significant landowner in Chablis, boasting holdings in six out of the seven Grand Cru appellations. Committed to limiting yields, the estate has embraced organic cultivation methods since 2000. This particular release comes from the Premier Cru Vaulorent, where the estate owns a 3.6-hectare plot, representing 23% of the total appellation. The wine is aged for 14 months in neutral French oak barrels for 50% of the harvest, and the remainder in stainless-steel vats. Expect notes of white-fleshed fruits, citrus and plenty of minéralité. Available here in a large magnum format, ideal for special occasions.
