Bourgogne Aligoté Pierre-Yves Colin-Morey 2020 is crafted from 100% Aligoté sourced from vineyards with an average vine age of over 45 years, primarily located in the Hautes Côtes de Beaune, with a smaller portion from Chassagne-Montrachet. The wine undergoes fermentation and ageing in older 350L barrels for 14 months, followed by three months in stainless steel. This approach utilises indigenous yeasts, resulting in an expression of the clay and limestone terroir. Pierre-Yves Colin-Morey is recognised as one of the leading wine producers in the Côte de Beaune.
