Old Tom Gins were very popular in the 18th century when sugars were added to the spirit to make it more acceptable to the palate. This gin is aged in first fill Pedro Ximenez sherry barrels where the sweetness and richness of the sherry is absorbed by the gin and then a small amount of PX sherry is added for flavour and mouthfeel.
