Of course it all started with a bottle of 1989 La Tâche.

Seventeen & having been chosen to assist as a wine waiter in a fine dining restaurant I was completely out of my depth & enjoying tasting lots of wines. The ’89 La Tâche made me realise that there was so much more to wine & I was determined to find out what & why. After interrupting my wine career with a degree at St Andrews I headed back to leafy Sussex from where I hail & eventually became Head Sommelier in a Michelin-starred restaurant for a number of years. Whether it was purchasing, pouring or pairing I loved everything vinous & to experience it in a fine dining environment was intoxicating.

Looking for a new experience in the wine capital of the world, there was only one place to turn – Hedonism. Nowhere else is there such an array of fine wines & spirits in one place & I knew I was home. My favourite wines are the classics of Bordeaux & Burgundy, with California coming a close third. Having passed my qualifications with the Court of Master Sommeliers I am still always interested to try new wines & discover fantastic spirits I am forever learning & expanding my palate.
