Chablis Vaillons

Located on the left bank of the Serein river south-west of the town of Chablis itself, the Premier Cru of Vaillons is one of the largest in Chablis. Les Vaillons was in fact one of the first left-bank climats to be classified as a Premier Cru. The 129ha Vaillons vineyard is made up of eight climats: Vaillons, Roncières, Beugnons, Les Lys, Les Epinottes, Châtains, Sécher and Mélinots. Each of these is a Premier Cru in its own right, but all can be blended together to produce Vaillons 1er Cru.
The vineyard’s south and east exposure means that Vaillons catches the best of the morning sun. The soil, which is relatively shallow with a subsoil dense in Kimmeridgian limestone, bares striking similarities with that of the Chablis Grand Cru sites on the other side of Chablis village. Vaillons Chablis tend to be floral and relatively restrained yet with the intense minerality which is characteristic of Chardonnays produced in the region’s best limestone soils. The finest examples of Chablis Vaillons are inarguably those produced by Domaine René et Vincent Dauvissat.
