Dassai's new brewery in New York state represents an exciting and long-planned collaboration with the Culinary Institute of America, pushing forward Dassai's mission to put fine sake on the dining tables of the gastronomically-inclined around the world. 

All American Terroir

With Dassai Blue, the brand aims to introduce a refined sake that appeals to both sake connoisseurs and newcomers, offering a smoother, slightly sweeter flavor profile at 14% alcohol content. Rice is grown from seed in Arkansas while water is sourced from the Hudson River Valley.

Renowned for its depth and complexity of flavour, Dassai Blue exclusively uses Yamada Nishiki, known as the "King of sake rice," to create Junmai Daiginjo, the highest grade of sake in the world. Dassai Blue 50 is bottled in three distinct expressions to showcase not only the versatility of the rice but also the exceptional craftsmanship involved in every bottle of Dassai Blue. This edition is the pasteurised version.

Licorice and cantaloupe lead into flavours of pineapple candy, lemon curd, and vanilla, with a subtle hint of brine on the finish.
