Dassai is a family-owned brewery that produces super premium sake of Junmai Daiginjo level. In 2019 the company launched a contest entitled ‘Beyond the Best Yamada-Nishiki Project’, to which they invited the participation of farmers who grow Yamada-Nishiki rice. Using the winning entry, the brewery went to produce ‘Beyond the Beyond’, a limited-edition of ultra-premium sake. Only 23 bottles that were made available onto the market.
