Champagne Billecart Salmon is based in Mareuil-sur-Aÿ and has remained family-owned since 1818. From the 2009 vintage this is a tensile and delicately textured release hallmarked by delicious aromatic intensity and a wonderfully persistent finish. A blend of 40% Pinot Noir, 33% Chardonnay and 27% Pinot Meunier, nearly three quarters of the fruit was sourced from Grands and Premiers Crus and was vinified entirely in stainless steel. It was aged on lees for 9 years before disgorgement and was bottled Extra Brut with 2g/L dosage.
