Another fantastic independent bottling from the wizards at Signatory. Aged for 27 years in an ex-Oloroso Sherry cask and bottled at 53.8% ABV, this is a big, rich single malt with notes of dried fruit, roasted citrus and aged oak on the nose. The palate is woody with notes of date, fig and a hint of peppery spice while the finish is big, malty and satisfying. One to sip and savour and marvel at the magic that can be woven with barley, water, oak and time.
