Château d’Yquem is often considered the greatest sweet wine producer in the world, however, in select vintages they also make a superb dry white known as Ygrec de Yquem. It is a highly complex and distinctive wine made from a blend of mostly Sauvignon Blanc with a little Sémillon. The 2007 is an excellent release now perfect for drinking, combining citrus-driven youthfulness with subtly mature notes of honey and beeswax. This would be an excellent wine paired with white fish dishes.
