Ten Minutes by Tractor are one of the finest producers of Pinot Noir and Chardonnay in the cool-climate sub-region of Mornington Peninsula. The 2017 Wallis Chardonnay was hand-harvested from the Tree Block, whole-bunch pressed and fermented with indigenous yeasts in a combination of 228-litre French oak and 600-litre Austrian oak barrels. To keep the wines fresh and taut, maturation is for 10 months in oak with no bâtonnage and only partial malolactic conversion.
The result is a brilliantly complex wine with ample natural mid-palate intensity and volume yet an intrinsic softness and delicacy. It is impeccably balanced and exceptionally flavourful, suggesting an incredibly bright future lies ahead. Just 206 dozen bottles produced.
