‘Silex’ is a superb white wine produced by Domaine Didier Dagueneau in the Loire Valley. It is made from 100% Sauvignon Blanc grapes grown on the Saint-Andlaint hill in the Pouilly-Fumé appellation. The wine is typically aged for 12 months in stainless-steel tanks and then bottled without fining or filtration. On the nose, aromas of apple dominate at first before giving way to floral and herbaceous notes. On the palate, expect tropical fruit flavours, with a superb acidity and mineral edge.
