DAOU Estate produces accessible yet very often profound Cabernet Sauvignon in the Paso Robles district of California. The estate was founded in 2007 by Lebanese tech magnates, and brothers, George and Daniel Daou with the intention of producing Cabs to rival the best of Napa, or indeed the Left Bank of Bordeaux. Innovations include the use of proprietary yeast selected from more than 100 experimental strains, and the use of bespoke oak barrels for the estate`s best wines. The estate Cabernet Sauvignon was produced solely from free-run juice and was aged for 21 months in new French oak barrels.
