Philippe Pacalet created his négociant label in 1999 and produces a characterful and distinctive range of red and white wines from several villages in Burgundy, Beaujolais and the Northern Rhône. More towards the “natural” end of the spectrum, he farms biodynamically and insists on ferments with 100% whole bunches, only natural yeasts and no additional sulphur.
2018 was a highly successful vintage for the Côte de Beaune and this is a gorgeous Chassagne-Montrachet produced from vines that average 50 years of age. It is generous, rich and concentrated, yet is kept in check by a fine thread of saliva-inducing acidity and subtle mineral tension. Though excellent to drink already, this may well benefit from a few years in the cellar.
