Established in 1959, William Fèvre has emerged as a significant landowner in Chablis, boasting holdings in six out of the seven Grand Cru appellations. Committed to limiting yields, the estate has embraced organic cultivation methods since 2000. This particular release comes from the Grand Cru Valmur, where the estate owns a 1.15-hectare plot. The grapes are harvested by hand and the wine is aged for up to 15 months on fine lees in neutral French oak barrels. The 2021 vintage is already approachable now, with no hard edges and plenty of ripe stone fruits.
