Domaine William Fèvre has become a standard bearer for classically styled Chablis and is also now one of the biggest landowners in the region with 78 hectares of prestigious vineyards, including significant holdings in many Premiers Crus and in six of the seven Grands Crus. Vinification is very traditional with fermentation and maturation on fine lees undertaken in a combination of stainless and seasoned oak (ave. 6 years old).
The 2013 Grand Cru Les Clos is an excellent release from a tough vintage. In fact, this is a standout wine with beautifully crisp citrus and Granny Smith fruits, light floral perfume and chalky mineral depth. Now with a little bottle age, slightly savoury notes of citrus peel and griddled nuts are also beginning to emerge.
