Eiswein is a notoriously difficult style of wine to produce and is becoming ever rarer with climate change. Shrivelled berries are left on the vine and are then harvested in the depths of winter when they have frozen. The juice extracted from the frozen berries is exceptionally concentrated and sweet, resulting in wines that are incredibly rich but remarkably high acidity and wonderfully pure flavours.
