Collard-Picard is one of the best-kept secrets amongst the newer Champagne houses. Cuvée Selection is a Blanc de Noirs made from 50% Pinot Noir and 50% Pinot Meunier from the Vallée de la Marne. After three years maturation in the cellar, this is ready to be enjoyed simply by itself or paired with seared scallops.
