Domaine Paul Pillot is a 13-hectare estate in the heart of the Côte de Beaune now under the stewardship of dynamic 4th generation winemaker, Thierry Pillot. This is a delicious Aligoté produced from 45-year-old organically tended vines in Remigny and Chassagne-Montrachet. The 2018 is vibrant and open-knit, generous with rich apple and citrus fruits but nicely balanced by precise acidity and a subtle mineral tang.
