Run by Véronique Desfontaine and her sons, Château de Chamilly, is one of the jewels of the Mâconnais region. Their delicious Bourgogne Aligoté is made from fruit sourced from vineyards in Chamilly and Buxy with average vine age around 70 years. Heavily citrus-driven, it is wonderfully bright and fresh, though has subtle floral and mineral accents that add attractive layers of complexity. An excellent food wine, this is superb paired with white fish.
