 Pavie 2019 is a full-bodied, Merlot-based red wine from the revered property of Château Pavie in the St-Emilion appellation of Bordeaux. Pavie is widely regarded as one of Bordeaux’s greatest terroirs. Largely limestone and clay soils, excellent drainage and a sun-catching southerly exposure all contribute to this. Available here in magnum format, the 2019 is a blend of 50% Merlot, 32% Cabernet Franc and 18% Cabernet Sauvignon. "Lots of blackberry and grilled meat with earth and spice. Some smoky undertones, too. Blackcurrants. Complex. Full-bodied with round, juicy tannins, yet they turn extremely fine and very linear and go on for minutes. Great length.  Established exactly a century ago, Domaine Coche-Dury is one of the leading wine producers in the Côte de Beaune. The estate consists of approximately 10.5 hectares of vineyard area, predominantly in and around the winery in Meursault. Coche-Dury`s only grand cru wine is this Corton-Charlemagne, where it owns a 0.88-hectare plot.  DRC Romanée-Conti 2015 is a full-bodied red wine from the Grand Cru climat of Romanée-Conti in the Vosne-Romanée commune of the Côte de Nuits. With a rich heritage that goes back to the 16th century, Domaine de la Romanée-Conti needs no introduction. The estate, which is co-owned by the Villaine and Leroy families, is the largest proprietor of Grand Cru vineyards in Vosne-Romanée. The domaine has always cultivated its vines according to the principles of organic farming and in 2017 obtained the Biodyvin biodynamic certification. On the 2015 Romanée-Conti Grand Cru. "Produced from seriously old vines with an average age of 56 years, DRC’s headline act does not remotely disappoint.  Clos Saint Jean Chateauneuf-du-Pape Sanctus Sanctorum 2007 is a full-bodied, blended red wine from the southern Rhône Valley of France. Clos Saint Jean is run by brothers Vincent and Pascal Maurel and is considered amongst the very finest estates in Châteauneuf-du-Pape. Sanctus Sanctorum is only produced in magnums and is made from 100% Grenache sourced from a single parcel of ancient vines in the famous lieu-dit of La Crau, matured in a combination of clay amphorae and demi-muids. "The largest scaled of the three, the 2007 Châteauneuf du Pape Sanctus Sanctorum offers a 2009-like level of decadence, yet is more dense, concentrated and thick, with a massive mid-palate and texture that has nothing out of place. Boasting off-the-chart aromas and flavours of crème de cassis, ground pepper, melted liquorice, loamy soil and exotic spice, it’s another desert island wine, in a lineup of desert island wines. Given that there are so few of these to go around, and that it’s bottled only in magnum, I know it’s difficult to open bottles, but don’t wait too long, as all three are insanely good – even today." 100 points, Wine Advocate, 2014
