Pavie 2019 is a full-bodied, Merlot-based red wine from the revered property of Château Pavie in the St-Emilion appellation of Bordeaux. Pavie is widely regarded as one of Bordeaux’s greatest terroirs. Largely limestone and clay soils, excellent drainage and a sun-catching southerly exposure all contribute to this. Available here in magnum format, the 2019 is a blend of 50% Merlot, 32% Cabernet Franc and 18% Cabernet Sauvignon. "Lots of blackberry and grilled meat with earth and spice. Some smoky undertones, too. Blackcurrants. Complex. Full-bodied with round, juicy tannins, yet they turn extremely fine and very linear and go on for minutes. Great length. Clos Saint Jean Chateauneuf-du-Pape Sanctus Sanctorum 2007 is a full-bodied, blended red wine from the southern Rhône Valley of France. Clos Saint Jean is run by brothers Vincent and Pascal Maurel and is considered amongst the very finest estates in Châteauneuf-du-Pape. Sanctus Sanctorum is only produced in magnums and is made from 100% Grenache sourced from a single parcel of ancient vines in the famous lieu-dit of La Crau, matured in a combination of clay amphorae and demi-muids. "The largest scaled of the three, the 2007 Châteauneuf du Pape Sanctus Sanctorum offers a 2009-like level of decadence, yet is more dense, concentrated and thick, with a massive mid-palate and texture that has nothing out of place. Boasting off-the-chart aromas and flavours of crème de cassis, ground pepper, melted liquorice, loamy soil and exotic spice, it’s another desert island wine, in a lineup of desert island wines.
