Distilled from select grape varieties around the picturesque towns of Cognac and Jarnac in Western France, north of Bordeaux, this exceptional brandy offers a beguiling blend of complexity, intensity, depth of flavour, and elegance. The journey of cognac begins as a rather acidic, low-alcohol wine, which then undergoes a meticulous double distillation to form eau-de-vie. This clear spirit is then lovingly aged in oak barrels, ultimately cut with water before bottling to achieve its perfect strength and character. The unique terroir of the Cognac region is paramount to its identity, with the area being meticulously divided into six crus, each contributing distinct characteristics to the grapes grown within. Cognac is usually bottled either as a single vintage or with one of three age statements, reflecting its time spent in cask. VS (Very Special) must be aged for a minimum of two years, VSOP (Very Superior Old Pale) must spend at least four years in oak barrels, and finally XO (Extra Old) must be a minimum of ten years in cask, though many esteemed producers vastly exceed these minimum requirements for even greater depth.
