Though revered for their world-class white wines, Domaine Arnaud Ente also produces excellent Pinot Noir. The Volnay 1er Cru ‘Les Santenots de Milieu’ is made from a tiny 0.39-hectare plot of vines planted in 1992, fermented and aged in stainless steel with 40% whole clusters and no punchdowns and only minimal pumping over. It is medium- to full-bodied, voluminous and lightly tannic, with lovely herb-laced red and black fruits and subtly stoney minerality.

The 2016 Volnay Les Santenots-les-Milieu 1er Cru has so much reduction on the nose that it is virtually impossible to view the wine underneath. The palate offers little redemption: overbearing, absurdly reduced with a lifeless finish that suggest some brettanomyces. Approach with caution. A leading light in Meursault, Burgundy, Arnaud Ente and his wife, Marie-Odile craft exquisite micro-production Burgundies that easily compete with the finest in the region. The Domaine owns four hectares which are managed with a very small and hands-on team. The key grape varieties here are Chardonnay and Pinot Noir, used to produce stand out Meursault, Puligny Montrachet and Bourgogne Pinot Noir that are renowned for their precision and elegance.

The style has tended towards the opulent, with late picking for fuller ripeness being a key part of Arnaud's philosophy in the 1990s. More recently though the wines have presented with greater levels of freshness and minerality as the winemaking practices have changed and evolved.
