The Meursault Les Meix Chavaux Roulot 2007 is a white Burgundy produced exclusively from Chardonnay grapes sourced from the Les Meix Chavaux vineyard. This parcel totals approximately 0.95 hectares, featuring vines planted across a span from 1929 to 1996, rooted in clay-limestone soils characteristic of Meursault. The wine exhibits notes of fresh lemon, green apple and white flowers, intertwined with hints of minerality and toasted almond. On the palate, it provides a balance of citrus fruit and pronounced minerality, indicative of the vintage`s cooler conditions.

- Bright, pale yellow. Reserved aromas of yellow peach and rocks. Less supple but more complex than the Vireuils, with a firm spine of acidity giving thrust to the lemony flavor. Still youthfully angular (always the highest in acidity among my wines, says Roulot) but finishes with excellent cut and length. Give this one four or five years.
