Plénitude 2 is the second life of Dom Pérignon, which sees close to 15 years of slow transformation in the cellars. On the nose, citrusy notes of pink grapefruit and blood oranges gently cede to figs. The additional time on the lees elevates the minerality of the vintage, together with complex nuances of cocoa, mocha, roasted nuts, brioche and honey. Precise and sculptural on the palate, concluding on a long and liquorice finish.

The 2004 Dom Pérignon P2 is now entering its first plateau of maturity, where the first notes of aromatic development are present. Hints of marzipan, lemon confit dried flowers, mint, spice and baked apple tart lend notable complexity throughout. Soft contours add to its open-knit, creamy personality.

The heatwave year of 2003 was exceptional so the vines didn`t have as much energy as usual to devote to grapes rather than wood. So with the harmonious climate of 2004 the vines gave back all the energy to the grapes, which resulted in a good quantity, very good quality and good maturity. `These sort of years are very rare in Champagne but 1969 and 1970 were similar`, according to chef de cave Vincent Chaperon (whose first Dom Pérignon, with Richard Geoffroy, was 2005). (1970 was the time Champagne produced 10,000 kg/ha.) The initial release was `super-toasty on the nose`. Chaperon wants to firm up the wine in its P2 instance. Disgorged October 21. Dosage <5 g/l. Chaperon is currently experimenting further with dosage. To be launched in October 2022.Very deep straw. Lime syrup on the nose followed up with a savoury note. Then on the palate it’s very Dom P with that winning creamy lemon-sherbet character on the palate. Big and round and yet with a flirtatious kick on the end. Long with some chewiness. A serious wine that`s very easy to like.(JR)

The Past, Present and Future of Champagne

The first release of this now famous prestige cuvée was the 1921 vintage, launched in 1936. Dom Pérignon produces only vintage Champagnes, both blanc and rosé, and offer a number of late release bottlings under their Oenothèque and Plénitude labels. The wine is named after the legendary Benedictine monk, Father Pierre Pérignon, who in 1668 arrived at the Abbey of Hautvillers, north of Épernay and began experiments that would eventually lead to the creation and bottling of sparkling wine as we know it today.

The Maison produces elegantly balanced, harmonious and extraordinarily age-worthy Champagnes that are appreciated the world over. Young vintages offer a citrus-forward, brioche-like profile while mature bottlings present notes of toasted hazelnut, honey and orange oil. A true classic in the category and a wine that remains eternally popular with connoisseurs.
