Châteauneuf-du-Pape Cuvée Réserve Sabon 2007 exhibits a deep ruby color indicative of its maturity. Aromas of ripe dark fruits like blackberry and plum are complemented by earthy notes of leather and subtle hints of spice and herbs, characteristic of the Southern Rhône. The palate reveals a medium to full-bodied profile, with well-integrated tannins and a balanced acidity. flavours of black cherry and raspberry dominate, supported by layers of garrigue and a touch of savoury olive.
The wine is a blend primarily composed of Grenache, along with other varietals permitted in the Châteauneuf-du-Pape appellation, showcasing the region’s diverse terroir. 2007 was regarded as a favorable vintage, producing wines with good structure and aging potential. This cuvée is often noted for its capability to develop over time, making it suitable for both immediate enjoyment and further cellaring. The finish is persistent, revealing delicate nuances that linger, inviting further exploration of its complexity.

Opaque ruby. Pungent raspberry and blackberry aromas are complicated by minerals and dried flowers. Lively red fruit flavors gain depth in the middle palate and pick up a deeper cherry pit quality. The finish repeats the cherry note and leaves notes of licorice and smoky minerals behind. I'd give this a few more years of aging, at the least.Josh Raynolds1st January 2010
