Bruno Paillard Nec Plus Ultra 2009 is a vintage, prestige-cuvée Champagne produced by Bruno Paillard in Reims, France. Bruno Paillard`s Nec Plus Ultra (from the Latin for `nothing beyond`), was born from a desire to create the greatest possible Champagne from exceptional vintages and from grapes sourced exclusively from Grand Cru vineyards. A 50/50 blend of Pinot Noir and Chardonnay from the exceptional 2009, this Champagne was vinified in old oak barrels and aged in bottle `sur latte` for 12 years before being disgorged in November 2022 with a dosage of 4.5 g/L. Producer note. "Initial aromas of bigarreau cherry mingle with candied citrus and powerful white flowers such as seringat and jasmine. On aeration, notes of calisson, nutmeg and fresh ginger appear, accompanied by sandalwood and peppermint, adding great freshness and remarkable complexity to the whole. On the palate, the attack fully occupies the palate with a precise, elegant structure. The wine`s persistent salinity blends with the fleshy, juicy feel of the fruit. The texture, melted and deep, unfolds in surprising length, sustained by a delicate freshness."

Matured entirely in barrels—most of them previously employed for white Bordeaux—and disgorged in November 2022 with a dosage of 4.5 grams per liter, Bruno Paillard’s 2009 N.P.U. Nec Plus Ultra reveals a bouquet of red apple, quince, dried apricot, grapefruit and ginger, mingling with acacia blossom and a subtle nuance of buckwheat honey. On the palate, it is medium-bodied, taut and incisive, animated by a pillowy mousse and laden with racy acids, culminating in a long, chalky finish. If one were to identify any shortcoming, it would be a desire for a more harmonious transition between the wine’s luxuriant bouquet and a palate that proves comparatively lean and driven by acidity. - Kristaps Karklins
