For eight generations, Champagne Pierre Paillard has remained firmly rooted in Bouzy Grand Cru, where brothers Antoine and Quentin Paillard now carry forward the family domaine. Across 11 hectares of organically farmed vineyards, the brothers work with old vines and historic massal selections, taking a meticulous approach that places the character of the vineyard at the heart of every wine.
In the cellar, each cuvée is fermented in oak, aged on fine lees and matured in the family’s deep chalk cellars, allowing time and terroir to shape the wines. Since 2018, the Paillard brothers have also ventured beyond Bouzy, exploring old-vine parcels across the Montagne de Reims and bringing a broader perspective to their work.
The resulting Champagnes are both vinous and precise, combining the richness and depth of Bouzy with the freshness and chalk-driven tension of the wider Montagne de Reims.
Guided by Quentin Paillard, the tasting will move from the domaine’s Pinot Noir-led signature, Les Parcelles, through its two historic single vineyards in Bouzy, and finish with Grande Récolte 2012, aged for ten years on the lees.
