Ulysse Collin Les Pierrières 2008 is a single-vineyard Champagne crafted from 100% Chardonnay grapes sourced from the Les Pierrières plot in the Côte des Blancs. The wine reflects the site`s unique terroir, showcasing a blend of floral notes, citrus fruit, and a pronounced minerality. The palate displays a precise, tight structure, complemented by a delicate mousse and subtle oak influence from barrel fermentation. Led by winemaker Olivier Collin, Ulysse Collin is noted for its commitment to biodynamic practices and a focus on expressing terroir through low-intervention winemaking.

The NV Extra-Brut Blanc de Blancs Les Pierrières (2008) was the first vintage where Collin was able to buy some new barrels, and he bottled it as a pure vintage, labelling it with lieu-dit "Les Pierrières" for the first time. Offering up aromas of sweet orchard fruit and citrus zest mingled with notions of oyster shell, white flowers and struck flint, it`s medium to full-bodied, chiseled and incisive, with terrific depth at the core, racy acids and a long, electric finish. This was the wine that first alerted me, as a student, to the quality emerging from this address, and it is every bit as thrilling to revisit today. It`s even better, of course, in magnum, but this review refers to the original commercial disgorgment in 750-milliliter bottles. - William Kelley
