Based in the commune of Chavignol, François Cotat is known for producing Sancerre wines in a classic style. Their top vineyards include Monts Damnés, Les Caillottes, La Grande Côte, and Les Culs de Beaujeu, where this release comes from. The Sauvignon Blanc grapes are hand-picked slightly late, enabling the flavour compounds to fully mature. In the winery, these grapes undergo barrel fermentation with wild yeasts and the wines are bottled without fining or filtration.

Typically the last parcel to be picked by Cotat, the 2022 Cul de Beaujeu is a welcoming, open style. The merest hint of residual sugar (3g/l) is part of the roundness on the palate, but it's not sweet, merely smoothing out its core.
