One of the world's most famous grape varieties - Sauvignon Blanc wines is an adaptable grape that produces different styles of wine depending on a few fundamental factors - the climate, the vineyard and the winemaker. In France, it is responsible not only for the delicately saline and citrussy dry white wines of Sancerre and Pouilly-Fumé, but also the unctuous sweet wines of Sauternes and Barsac. In New Zealand, where the grape is hugely popular, it can produce aromatically intense wines with alluring tropical notes of ripe melon and guava and in the Napa Valley, it is sometimes aged for a period in oak barrels, creating a richer, fatter style sometimes dubbed "Fumé Blanc".
