Les Pavots is the flagship red blend of the iconic Peter Michael Winery and comes from a single rocky vineyard planted at 900-1,400ft elevation in the Knights Valley AVA, Sonoma County. The 2004 is a full-bodied, rich and complex blend of 62% Cabernet Sauvignon, 21% Merlot, 14% Cabernet Franc and 3% Petit Verdot.

Deep ruby. Sexy blackcurrant and boysenberry aromas with complicating tobacco and espresso tones. Lush and sweet, with dark fruit flavors, full body and dense, chewy tannins providing support. Turns silky with air, picking up more energetic red fruit tones and a light suggestion of iron. Finishes suave, focused and long, the blackcurrant note repeating. Peter Michael Winery was founded by British businessman Sir Peter Michael in the early 1980s with a singular vision - to make wine in the terroir-driven tradition of Burgundy and Bordeaux, under the California sun and in California soil. The winery currently produce around fifteen wines using four varietals - Cabernet Sauvignon, Pinot Noir, Chardonnay and Sauvignon Blanc.

Consistency and quality are the watchwords here - the wines are clearly inspired by the poise and precision of their Old World counterparts but can't help expressing an edge of Californian excess - ripe fruit abounds on the Chardonnay and Pinot Noir while the Cabernet Sauvignons have a density and concentration that many Bordelais would envy.
